Another Food Myth Debunked

“All truth passes through three stages: First, it is ridiculed; second, it is violently opposed; and third, it is accepted as self-evident.” Or "this is worthless nonsense; this is an interesting, but perverse, point of view; this is true, but quite unimportant; I always said so."  I would like to say that I was always on board with this but I wasn't.  In the eighties as a young adult, I too was hook line and sinker into the fat free diet.  We were taught and told by the experts that fat would kill us.  Luckily for me, I soon acquired a few mentors that showed me the light about fat a long time ago.  

 

Dr. Michael Colgan, Dr. Cory Holly, and Paul Chek all changed my line of thought in the early nineties. Fat is essential to our health. It is vital in every cell in our body building strong membranes, a precursor to many hormones, and our brain is comprised upwards of 60% from fat. Eat fat free or bad fat and your brain will be hurting. Most American's brains are in that state currently and people don't believe it to be true or just don't know it's occurring to them. In addition, fats act as carriers for important fat-soluble vitamins A, D, E, and K. Fats are needed for the conversion of carotene to vitamin A, for mineral absorption and more. We are starting to get into the "it is accepted as self-evident" part of our opening quote now.

Don’t wait for science to tell you what you should be doing for your health.  I always say we forget about the big science project each and every one of us witness, and that is our life experiences.  I personally don’t need a randomized, double blind, placebo control study to know what is working.  In my 32 years as an adult, I have watched obesity, heart disease, cancer, diabetes, and autoimmune disorders, to name only a few, become epidemic in our society.  That emphatically tells me that the fat free, cholesterol free, and everything in moderation is NOT working. 

 

As my friend and mentor Cory Holly, ND says in his Costanza Principle “Do the opposite of conventional thinking with your health, and you will be healthier for it.”  Use good science to help you along in this life, but don’t wait for it if what we have been doing for a millennium has been working.  Human cultures have thrived on fat and they didn’t have words for cancer, cardiovascular disease, and diabetes mellitus, because those diseases did not afflict their culture.

 

This is good news; enjoy your organic whole fat milk, we’ve been telling you that for years!
